Roasted Cauliflower & Almond Soup Recipe (Gluten Free & Dairy Free)

Roasted Cauliflower & Almond Soup

This is a lovely soup with a big bold thanks to roasting the cauliflower and spices. This soup is naturally gluten and dairy free and suitable for vegans.


This is really nice served with flax or seeded crackers for an extra boost of vitamin, minerals and good fats and proteins.



Roasted Cauliflower & Almond Soup Recipe

Serves 4

Gluten & Dairy free. Suitable for Vegans.

Ingredients

· Cauliflower chopped into florets

· 1 stick celery chopped into big pieces

· 4 garlic cloves deskinned and left whole.

· 2 onions, chopped into large chunks

· 2 tsp curry powder or curry paste.

· 1 tsp ground turmeric

· 2 tsp cumin seeds

· Good pinch of sea salt and ground pepper if desired

· 2 tbsp Extra virgin olive oil or coconut oil melted

· 100 g Almonds

· 200 ml almond milk

· 500 ml fresh vegetable stock or good quality stock such as Kallo (or organic stock is preferable)


Method

1. Pre-heat your oven to 170’c.

2. Place your spices and in a bowl and add 2tbsp of extra virgin olive oil or melted coconut oil. Mix together.

3. Coat the cauliflower florets, onion chunks and garlic cloves with the spice/oil mixture and place on a baking tray or large oven dish.

4. Bake in the oven for 20-30 minutes, until roasted. Add the almond a few minutes before the end so as these do not burn – we want these roasted but not burnt.

5. Transfer to pot, pour in vegetable stock bring to the boil and simmer for 5 minutes.

6. Add the almond milk.

7. Place soup in blender or use a stick blender when cool enough and process until smooth.

8. Garnish with chopped chives, parsley, seeds, or a drizzle of olive oil if desired.
